Easy Pancake Latkes

What You'll Need
- 2 cups frozen shredded hash brown potatoes
- 2 eggs beaten
- 2 tablespoons thinly sliced green onions or finely chopped onion
- 1/2 cup Pearl Milling Company™ Original Pancake and Waffle Mix
- 1/4 teaspoon salt or seasoned salt, optional
- 2 tablespoons vegetable oil
What You'll Do
- Thaw potatoes, drain and pat dry.
- In large bowl stir together potatoes, eggs and onion. Add salt, if desired.
- Add pancake mix; stir to combine well.
- Heat oil in large skillet over medium heat.
- For each pancake, pour about 1/4 cup batter into skillet and flatten with spatula.
- Cook 2 to 3 minutes on each side or until golden brown.
