What You'll Need

  • 2 cups frozen shredded hash brown potatoes
  • 2 eggs beaten
  • 2 tablespoons thinly sliced green onions or finely chopped onion
  • 1/2 cup Pearl Milling Company™ Original Pancake and Waffle Mix
  • 1/4 teaspoon salt or seasoned salt, optional
  • 2 tablespoons vegetable oil

What You'll Do

  • Thaw potatoes, drain and pat dry.
  • In large bowl stir together potatoes, eggs and onion. Add salt, if desired.
  • Add pancake mix; stir to combine well.
  • Heat oil in large skillet over medium heat.
  • For each pancake, pour about 1/4 cup batter into skillet and flatten with spatula.
  • Cook 2 to 3 minutes on each side or until golden brown.
